Who doesn’t love crispy potatoes at breakfast next to a delicious omelette or paired with a sweet gooey cinnamon roll? We wanted to develop a potato recipe that was not overpowering with seasoning and also complimented other dishes that might be at the breakfast table. The roasted breakfast potatoes pack the perfect punch that you would want in a potato dish. You will find this recipe is not only simple and time efficient, but could quickly become a household staple!


1 ½ lbs of small yellow potatoes

½ tsp onion powder

½ tsp Italian seasoning

½ tsp smoked paprika

½ tsp minced garlic

2 tbsp olive oil 


tHe process

Preheat the oven to 375 degrees. Spray a generous amount of cooking spray onto a baking sheet. 


Rinse, then drain potatoes in a large mixing bowl.


Next, cut potatoes into quarters and place back into the bowl.   

In a separate bowl, mix the onion powder, Italian seasoning, smoked paprika, and minced garlic. Then, pour the mixture over the potatoes.   


Next, add in olive oil over seasoned potatoes. 

Toss potatoes to make sure the oil and seasoning is evenly spread. I used a glass bowl with a lid so that I could shake the bowl and make sure the seasonings mixed well... without the mess. 

Pour the potatoes onto the baking sheet, and cook for 50-55 minutes, or until crispy.
